Nettle Pesto — A Green Medicine for Your Meals

    By Sandy

There is a kind of magic in transforming a wild green like nettle into a vibrant, nourishing pesto. This sauce carries the earth's energy, grounded nutrients, and subtle healing power straight onto your plate.

    A Tip Before You Begin

If you've gathered nettles from the wild — along hedgerows, woodland edges, or roadsides — it's wise to soak the leaves first to ensure they're clean and free of surface impurities. Add a splash of apple cider vinegar or a bit of baking soda to the water and gently rinse the leaves. This not only cleans them but also helps neutralise the tiny stinging hairs on fresh nettle leaves so they won't sting when you handle or eat them.

Once rinsed, blanch or steam the nettles for just a few minutes until they're tender and soft to the touch — this removes the sting completely and brings out their deep green essence. Young nettle tips harvested in spring are especially delicious and tender. Older nettle leaves can be used too, but the tender young growth is best for delicate pesto.

In Your Bowl — Build Your Pesto

Think of nettle pesto as a boost of iron and calcium, supporting vitality and overall wellbeing:

    • Steamed nettle leaves — rich in minerals like iron, calcium, magnesium, and potassium, plus antioxidants that support immune and anti-inflammatory pathways.
    • Garlic — for warmth and depth of flavour
    • Toasted seeds or nuts — sunflower seeds, pumpkin seeds, or walnuts add texture, healthy fats, and grounding energy
    • A splash of acid — apple cider vinegar or fresh lemon juice to brighten flavours
    • Zest of lemon — adds vitamin C, antioxidants, and a lively aroma that enhances nutrient absorption and the overall taste experience
    • Salt and olive oil — to harmonise and blend the pesto into a silky, vibrant sauce

Simply combine your steamed nettle with garlic, toasted seeds or nuts, a splash of acid, and salt. Then slowly drizzle in olive oil as you blend, coaxing the pesto to a smooth, lush, and earthy texture.

    Use It with Intention

Nettle pesto can be used in many nourishing ways:

    • Spoon it over roasted vegetables — try it on garlic-roasted potatoes for a comforting, grounding meal
    • Toss it with steamed vegetables like carrots, celery root, or turnip for a light, mineral-rich side dish
    • Mix it through sprouted grains or legumes for a balanced, energising meal
    • Swirl it into soups or broths to add colour, nutrients, and flavour

Nettle leaves are packed with bioactive compounds like flavonoids, phenolic acids, carotenoids, vitamins, and minerals — components studied for their antioxidant, anti-inflammatory, and immune-supporting properties. Steamed and blended into pesto, these nutrients become easily accessible in your meals.

A Note on Nettles and Harvesting

Most stinging nettle species, like Urtica dioica, are edible once cooked or blanched — the heat neutralises the sting. Young shoots and leaves gathered in spring before flowering are especially tender and ideal for pesto. Older leaves — while still edible after cooking — may be less tender.

There are many species in the nettle family, and while most edible nettles can be used in cooking, it's important to be sure of plant identification before consuming wild plants. Always use gloves when harvesting raw nettles to avoid the sting, and avoid plants from polluted roadsides.

    Why This Matters

This pesto isn't just flavour — it's nourishment. Nettles have a long history as food and traditional medicine, supporting digestion, circulation, and overall vitality. They're rich, grounding, and full of life — the kind of plant that reminds us that healing can come from the very earth beneath our feet.
